Mmm Mochi & ice cream!!!

Mmm Mochi!!!



I came across these at the local Trader’s Joe today. My sweet tooth been craving for something cold, decadent, but not overly sweet. These ice cream covered with Mochi were the perfect treat I must confess! Each Mochi can cover the size of an adult palm (women). It’s the perfect serving size and delightful to look at. The best part of this treat is that it’s Dairy free! I’m not a vegan but I prefer dairy free food. Rich milky products leave me feeling heavy and guilty, where as these are made with coconut milk. They are just as creamy without artery clogging richness. Try these if you ever come across them! The Thai mango rice are just as delightful!


This one is coconut flavor inside.  Once you bite into the chewy mochi shell you can taste the sweet cold filling.

This one is my favorite!  It is Mango flavor.  The outside is yellow and the ice cream filling is green but the taste is fruity and citrus!

I didn't take photos of the purple Mochi w/ chocolate filling.  Sorry, I gobbled that up before I can shoot it w/ my camera =D

Fluffy Banana Pancake - Vegan friendly

This is a great recipe for those who ran out of eggs or those pre-made pancake mixes.   It's also perfect for you vegans!!! I made this on a lazy weekend when I was hungry for a big brunch.  I actually surf the web for some vegan recipe but couldn't find a decent one so I just used the non-veg recipe minus the eggs and milk butter.  In replacement to the missing ingredients, I sliced up some ripe bananas =P  It came out perfect and delicious! 

Ingredients:
  • 2 cups all-purpose flour, stirred or sifted before measuring
  • 2 1/2 teaspoons baking powder
  • 3 tablespoons granulated sugar
  • 1/2 teaspoon salt
  • 1 sliced banana
  • 1 1/2 to 1 3/4 cups (cream soy) milk
  • 2 tablespoons melted (soy) butter


Start adding all the dry ingredients in a mixing bowl.  I use a fork to mix my batter.  Next add the wet ingredients.  Mix it well with a fork.  Add in Bananas or blueberries.  You should have a thick consistency like this picture below.



Once you have your batter mixed.  Heat the nonstick pan to medium high.  Add some "butter".  and pour in about half a cup of batter in the center.  Cover it until you see the batter evenly bubbly.  Open lid and flip once the edges are golden.  Leave the lid off.




These Gimme Lean soy-sausages are kick ass yum!  If you want to try a meatless approach - you should try these.   I usually don't like my vegetarian food to taste or look like meat but I think these are pretty awesome.  It really compliments the fluffy pancakes.



They're very squishy so be careful how you handle it.  I like to slice mine and pan fry it till it's brown and crispy on the sides.  My mouth is watering as I'm typing this it he middle of the night =P*

I salivate for these with maple syrup.... *Homer Simpson moment... mmmmmm...drool...

My little guy was a happy fellow that day =)

Fried Banana Roll & Ice Cream!!!




Many of my viewers told me this was similar to a Pilipino treat called Turon.  That just sparked my curiosity to make the real Turon!  Anywho! My aunt introduced me to this recipe when I was little and I always loved this treat.  I decided to try this one day with my boring vanilla ice cream and OMG!!! It was super delicious!  The two goes so well together it’s orgasmic!  First of all I like to use the regular banana you can find at any grocery store.  It will give you a hot molten gooeyness after frying.  Take a sample of that with some hard cold ice cream and you have yourself a match made in heaven!  Enjoy!

Veggie Chop Suey


Hey All,
I’ve been cooking many great recipes lately that I want to share. However my laziness has been getting the best of me to post them.

Okay, so today I had Eric made some yumsky tacos (no recipe yet) and there where left over fillings that I didn’t want to put for waste. It was basically beans and ground seiten (textured soy). I remembered to take some photos this time around. This is a great 30 minute meal, simple for lunch boxes, and kids love this stuff.

Ingredients:

1. ½ cup Cooked red kidney beans (sometimes I use black beans too)

2. ½ Cut onions (garlic is optional)

3. ½ cup minced Setien (looks like ground beef, gimme leans or boca works well)

4. ½ Jar tomato sauce (I sometimes use puree and make my own sauce but when I need something quick I use the already made sauce)

5. 1 box Macaroni or whatever you prefer.

6. Optional- veggies like zucchini or peas.

7. Optional- Table Spoon Nutritional Yeast



Prep:

Step 1. Boil your pasta half cooked then drain into cold water.


Step 2. In a hot skillet pan, toss in your onions till you smell the sweet aroma; then add in the cooked beans and minced seiten (or veggies). Once the seitens are brown, add the tomato sauce. Mix, then cover for 5 minutes.





Step 3. Add the cooked pasta (and Nutritional yeast). Mix. Turn off stove. You’re done!
